The Bikini Cocktail
Yields 10 servings
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Put every components inside a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the burner and leave to cool down completely. Pour into a clean bottle, seal keeping it chilled, it can be stored for about four weeks.
Preparing the Batch Mix: Pour all the liquids in a big jug, leave to sit for an hour, then strain preferably using cheesecloth, so it's perfectly clear.
When ready to serve: Pour 85ml of the batch mix into your mixing glass filled with ice, and agitate lightly for one minute to chill. Strain to a chilled martini glass or a similar vessel, decorate with some cranberries and finish by giving it a brief mist of the essential oil above the glass.
